leftover easy peasy pie

3 years ago (man how time flies!) I found this recipe on Jane's Apron.
It has become a family favorite.
I love it, not only because it is easy peasy and delicious, but also because I feel less wasteful when I make it (finally something to do with all those old bananas besides banana bread!)
As I can never leave well-enough alone, I have modified the recipe a wee bit, mostly because I never have exactly everything on hand so I have had to "make it work."

Banana Bread Pie (JollyGoode Style)
3 very ripe bananas
3/4 cup biscuit mix (like Bisquick)
3 large eggs
1 can (14 oz.) sweetened condensed milk
1/4 Cup Milk
2 Tbsp. butter, melted
2 tsp vanilla

Place bananas in a large mixing bowl and mash with an electric mixer until smooth. Add the rest of the ingredients and mix until well blended. Pour the mixture into 2 greased 9 in pie pans, and bake at 400 for
30-35 minutes. The pie should be caramelized on the edges but still a little soft in the center

Goes great with vanillia ice cream or homemade whip cream while warm.
We even eat it plain for breakfast.

    This looks yummy. I tinker as well ( its no wonder my recipes never look the same) what do you think- I can I use the Trader joe's biscuit mix. Not sure if it translates over from Bisquick.

  2. I saw the pic first and thought "ohhh, that looks like banana bread pie"... and it is! Now I'm wishing I had some ripe bananas.

  3. My mouth is watering, this pie looks delicious. I'm with you on banana wasting, bet my picky ones would gobble this right up.
